Do you find that when you’re using your cork scr

Do you find that when you’re using your cork screw, you often break the cork, or end up not going through the center of the cork?

Here’s a quick tip: turn your corkscrew sideways and push the tip of the corkscrew into the center of the cork before you start to turn. This way you ensure you go right through the center of the cork and avoid breaking, crumbling, or making it harder to get into that delicious bottle of wine.

🍷 Only a few cases of our 2018 Sauvignon Blanc and 2019 Idilico Monastrell left! Don't miss out on your chance to enjoy these delicious wines.

Sauv Blanc - Aromatically the wine shows citrus, stone fruit and some herbal components followed by a tinaja induced aromatic twist of noticeable damped earth or wet rock (minerality?) Flavors are neutral with peach and lychee and perhaps a hint of ferrous from the clay. It’s in the palate where the wine is transformed by acquiring considerable volume and depth when compared to typical stainless steel fermented Sauvignon Blancs. The finish is also quite exuberant yet fresh and balanced.

Monastrell - showcases tart dark cherry, blue fruits, and freshly crushed pepper. In Washington the fruit retains great acidity due to our cool nights at harvest giving this wine great freshness and lower alcohol levels. A perfect addition to your Spring table.

-So what on earth was that cheese crisp looking thing we posted about?

-Did someone say wine diamonds?? You were RIGHT!

-They are crystals that can form in wine during fermentation and aging.

-These crystals are technically known as potassium bitartrate, which is a natural byproduct of the process of turning grape juice into wine. They are also sometimes called "cream of tartar" or "tartrates."

-Wine diamonds are harmless and do not affect the taste or quality of the wine. They may, however, be perceived as an unwanted sediment or impurity by some consumers. And we all like a pretty glass of white wine, so we wanted to do something about it.

-To avoid wine diamonds in your bottle, we use a process called cold stabilization, which involves chilling the wine to encourage the crystals to form before the wine is bottled. Seen here: Javier cleaning out our tanks after cold stabilizing our Albarino. We will be bottling our crowd favorite white wine in a few weeks with sales starting as soon as late April or early May.

Bing cherry, gooseberries, vanilla oh my! Have you ever read tasting notes and wished you could pick out these aromas and flavors for yourself? Well after our next event, you will have the skills to do just that!

We are excited to kick off @wa_state_wine Taste WA month with our second ever class at Pomum Cellars. We will be partnering with Lamppost Coffee Roasters and discussing the flavors and aromas in wine and coffee and how to detect them! Did you know that just like wine, coffee has many different flavors and aromas based on where the coffee is from and how it's roasted and brewed??

This class will be a beginners level class, so don't be worried that you won't know what to do. We will be teaching you the best way to evaluate your wine's aromas and flavors in a fun and laid back class environment.

After the class, we will have a little time left over to share some light bites together and a glass of wine while you ask questions and continue to explore this very fun topic.
